Today I have a new recipe to share with you that is perfect for Autumn. It is for Cranberry Apple Muffins and can be found on the Recipes page. I made these last week and I think they came out pretty well (when I try to make my own recipes it can be hit or miss sometimes; I do try to look at similar recipes to make sure I'm not totally off in my ingredient amounts, lol).

Cranberry Apple Muffins
Makes about 12-15 muffinsIngredients
- 1 3/4 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom (or ground cloves)
- 1 egg
- 1 cup milk
- 1/3 stick butter, melted
- 2-3 apples (peeled, cored, and chopped)
- 1/2 cup cranberries, fresh or frozen, cut in half.
Directions
Step 1) Preheat the oven to 400°F. Line a muffin tin with cupcake liners (alternatively you can grease and flour each well in the muffin tin).
Step 2) In a large bowl, combine the dry ingredients.
Step 3) In a small bowl, mix together the milk, egg and butter. Add the wet ingredients to the dry in gredients in the large bowl and mix or beat together until you form a batter.
Step 4) Peel the apples and remove the cores. Then chop the apples into small piece. Stir the chopped apples and cranberries into the batter. Fill each cupcake liner about 3/4 full.
Step 5) Place the muffin tin in the overn and bake for 20-25 minutes or until a toothpick inserted into the center of a few of the muffins comes out clean. Allow the muffins to cool. You can leave the muffins plain or if desired, you can sprinkle some powder sugar on top or add your favorite cream cheese or vanilla icing. Enjoy!
