Today I have a new recipe to share with you that is perfect for Autumn. It is for Cranberry Apple Muffins and can be found on the Recipes page. I made these last week and I think they came out pretty well (when I try to make my own recipes it can be hit or miss sometimes; I do try to look at similar recipes to make sure I'm not totally off in my ingredient amounts, lol). Hello! It has been forever since I've last written here. The holidays are in full swing, with wrapping presents, watching Christmas movies, baking and enjoying hot chocolate, eggnog and peppermint mochas. Yum! I have a recipe for you which you can also find on the Recipes page on the site. It is for Chocolate Peppermint Chip Cookies. I just baked a batch yesterday, by modifying a halved recipe for regular chocolate chip cookies.
Makes about 18-24 cookies
Ingredients
- 1 1/8 cups flour - 1/4 cup cocoa powder - 1/2 teaspoon baking soda - 1/2 teaspoon salt (optional) - 3/4 stick (6 tablespoons) butter - 3/8 cup granulated sugar - 1/4 cup packed brown sugar - 1/2 tsp peppermint extract - 1 egg - 1 cup mint chocolate M&M'S® candy (or mint chocolate chips) Directions Step 1) Preheat the oven to 375°F. Step 2) In a small bowl, combine the flour, baking soda, salt and cocoa powder. Step 3) In a large bowl, stir or beat the butter, granulated sugar, brown sugar, peppermint extract and egg. Gradually stir or beat in the flour mixture. Stir in the mint chocolate M&M'S® candy (or mint chocolate chips). Step 4) Drop by rounded teaspoon onto ungreased cookie sheets. Step 5) Bake for 9-11 minutes or until set. Cool on baking sheet for about two minutes, then set cookies on wire rack to cool completely.

I love smoothies; most of them are healthy and taste so good. Usually when I make them, I just add some of this fruit and some of that fruit and add a dash or two of cinnamon-and of course, the milk (and sometimes yogurt or ice cream) or juice. Today I have a recipe for you for an Orange Banana Strawberry Smoothie that I hope you'll enjoy: Orange Banana Strawberry Smoothie Ingredients - 1 cup orange Juice - 1 medium Banana - 10-15 Strawberries (de-leafed and de-stemmed) - couple dashes Cinnamon - (optional) couple dashes Cardomom or Ginger or Nutmeg Directions Step 1: Pour the orange juice into a blender. Cut up the banana and put it into the banana. Cut the strawberries in half and add them to the blender. Add the cinnamon and cardomom*. Step 2: Blend the ingredients for a minute or two, until smooth and pour into a glass or two. Enjoy! (Makes 1-2 servings) If you try this smoothie, let me know what you think. *If you don't have cardomom don't worry about it. You could try ginger or nutmeg instead (I haven't tried either of them in this) or just do the cinnamon. I just felt like adding cardomom just to try it. Last Saturday (October 20th) was the annual Keene Pumpkin Festival. At first, I was going to do an American Girl themed pumpkin, along with my mom and a friend, however that didn't quite pan out. Instead, I decided to try doing a Monster High Frankie Stein jackolantern. I printed out an image of Frankie and then traced over it, to make a template. I taped the template to my pumpkin, made dots and cut out the pieces. Although Pumpkin Frankie didn't come out the best (a little part even broke on her but it was still okay), I still love how she came out. Pumpkin Frankie, with the image I used and one of my Frankie Stein dolls: Pumpkin Frankie and my mom's Charlie Brown-in-His-Ghost-Costume jackolantern, at Pumpkin Fest: Lit Jackolanterns at the Pumpkin Festival: While my friend, Jenn, was over last weekend, I baked a Blueberry Apple pie. I modified an Apple Pie recipe to make my own because I wanted to try making my own recipe. I had also been looking through the Better Homes and Gardens magazine and I loved that the pie on the cover had leaf cutouts as the top crust. It looked very pretty and I wanted to do that. I used a mini star cookie cutter for the crust edge because the mini leaf cookie cutters that we have are used for Sculpey/Fimo (we'll have to buy another set of mini leaves). I think my Blueberry Apple pie came out nicely, even though I accidentally forgot to put foil over it while baking, to help keep the crust from over-browning. Jenn loved it and so did I.
